JOB SUMMARY

The Pastry Sous Chef will assist the Executive Pastry Chef in supervising timely and quality preparation of food product in the pastry department.

 

JOB FUNCTIONS

Essential duties and responsibilities include the following. Other duties may be assigned.

  • Assist in pastry menu creation and coordinate menu changes.
  • Train on new techniques/recipes/plating as directed by Executive Pastry Chef
  • Complete pastry product orders according to product lists and pars 
  • Note and correct products not meeting the standards of Executive Pastry Chef
  • Communicate with both front of house and back of house on all changes, issues or problems with food and resolutions
  • Assist in organizing and producing weekly banquet and outsourced orders
  • Inventory and walk through of prepped items done by opening chefs or leads, including inventory of all prepped goods, ensuring quality and correct quantities
  • Write daily prep lists keeping in mind banquets and weekly prep
  • Update recipes and or procedures as needed, reprinting and notifying staff of changes
  • Assist in writing and testing recipes, keeping up to date and informing staff or changes
  • Record weekly inventory of all ingredients (Sundays) and Equipment (Saturdays) and communicating to Executive Pastry Chef of quantities.
  • Adjusting recipe costs and costing out written recipes
  • Complete walk-through of the kitchen to assess maintenance needs (i.e. light bulbs out, leaks, equipment functionality) and cleanliness
  • Directly responsible for controlling costs such as food and labor costs
  • Record all shift notes in manager log (Avero Slingshot)
  • Audit daily employee clock-in and clock-out times to ensure correspondence with employee schedules. Ensure BOH staff are adhering to time keeping procedures.
  • Log employee issues and concerns in Pastry Chef Log and communicate to Executive Pastry Chef
  • Weekly maintenance of equipment cleaning, organizing and inventory.
  • Logging equipment and breakage/maintenance issues. Notify Executive Pastry Chef and necessary parties to resolve.
  • Maintain clean and sanitary conditions at all times.

 

REQUIRED EDUCATION AND EXPERIENCE

  • High school diploma or general education degree (GED) required. 
  • Bachelor’s degree or equivalent 4-year degree preferred. 
  • At least 3 years of experience in kitchen or food preparation environment required. 
  • At least 1 year sous chef or kitchen management experience preferred.
  • ServSafe Food Handlers Certificate
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals, as well as converse comfortably with guests.

Compensation & Benefits

  • Salary range: $60,000-$70,000

The company contributes $350 per month toward employee-only medical coverage and pays 100% of employee-only premiums for the Dental Low Plan and Vision Plan.
  • 401k Program with Match: Company matches $1 for $1 up to $1,000 per calendar year.
  • Paid Time Off: 3 weeks paid vacation
